These chicken rice paper rolls are fresh, healthy, and perfect for a light meal or appetizer.
Ingredients:
- For the Rolls:
- 12 rice paper wrappers
- 300 grams cooked chicken breast, shredded or thinly sliced
- 100 grams rice vermicelli noodles
- 1 large carrot, julienned
- 1 cucumber, julienned
- 1 red bell pepper, julienned
- 1 cup (about 50 grams) shredded lettuce, red cabbage or mixed greens
- Fresh herbs: mint, cilantro, and basil
You can add any vegetable or fruit you like in your rolls. Suggestions: avocado, mango, cabbage, celery stick.
- For the Dipping Sauce:
- 60 ml hoisin sauce
- 2 tablespoons peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon lime or lemon juice
- 1-2 tablespoons water (to thin the sauce, as needed)
- Chopped peanuts (optional, for garnish)
- Red pepper flakes (optional, for spice)
Instructions:
- Prepare the Vermicelli Noodles:
- Cook the rice vermicelli noodles according to the package instructions. Drain and rinse with cold water to stop the cooking process. Set aside.
- Prepare the Vegetables and Chicken:
- Julienne the carrot, cucumber, and red bell pepper.
- Shred the cooked chicken breast.
- Set Up the Rolling Station:
- Fill a large bowl with warm water.
- Lay out all the prepared ingredients and the rice paper wrappers on a clean surface.
- Assemble the Rolls:
- Dip one rice paper wrapper into the warm water for about 10-15 seconds until it becomes pliable but not too soft.
- Lay the softened wrapper on a clean, flat surface.
- In the center of the wrapper, place a small amount of lettuce or mixed greens, followed by a small portion of noodles, carrots, cucumber, bell pepper, chicken, and fresh herbs.
- Fold the bottom edge of the wrapper over the filling, then fold in the sides, and roll it up tightly, like a burrito. Repeat with the remaining wrappers and filling ingredients.
- Prepare the Dipping Sauce:
- In a small bowl, whisk together hoisin sauce, peanut butter, soy sauce, lime juice, and water until smooth. Adjust the consistency with more water if needed.
- Garnish with chopped peanuts and red pepper flakes, if desired.
- Serve:
- Serve the rice paper rolls immediately with the dipping sauce on the side.
