Baked Cod With Vegetables

Ingredients:

  • 4 cod fillets
  • 2 carrots, sliced
  • 1 zucchini, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • Fresh thyme or parsley
  • Salt and pepper to taste
  • Olive oil
  • Lemon slices for serving

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. Place carrots, zucchini, onion, and garlic in a baking dish. Drizzle with olive oil and season with salt and pepper. Mix well.
  3. Place the cod fillets on top of the vegetables in the dish.
  4. Drizzle the cod fillets with a little more olive oil and season with salt, pepper, and fresh thyme or parsley.
  5. Cover the dish with aluminum foil and bake in the oven for about 15-20 minutes, or until the fish is cooked through and the vegetables are tender.
  6. Serve immediately, garnished with fresh lemon slices.
