Chicken Rice Paper Roll Recipe

Chicken rolls

These chicken rice paper rolls are fresh, healthy, and perfect for a light meal or appetizer.

Ingredients:

  • For the Rolls:
    • 12 rice paper wrappers
    • 300 grams cooked chicken breast, shredded or thinly sliced
    • 100 grams rice vermicelli noodles
    • 1 large carrot, julienned
    • 1 cucumber, julienned
    • 1 red bell pepper, julienned
    • 1 cup (about 50 grams) shredded lettuce, red cabbage or mixed greens
    • Fresh herbs: mint, cilantro, and basil

You can add any vegetable or fruit you like in your rolls. Suggestions: avocado, mango, cabbage, celery stick.

  • For the Dipping Sauce:
    • 60 ml hoisin sauce
    • 2 tablespoons peanut butter
    • 1 tablespoon soy sauce
    • 1 tablespoon lime or lemon juice
    • 1-2 tablespoons water (to thin the sauce, as needed)
    • Chopped peanuts (optional, for garnish)
    • Red pepper flakes (optional, for spice)

Instructions:

  1. Prepare the Vermicelli Noodles:
    • Cook the rice vermicelli noodles according to the package instructions. Drain and rinse with cold water to stop the cooking process. Set aside.
  2. Prepare the Vegetables and Chicken:
    • Julienne the carrot, cucumber, and red bell pepper.
    • Shred the cooked chicken breast.
  3. Set Up the Rolling Station:
    • Fill a large bowl with warm water.
    • Lay out all the prepared ingredients and the rice paper wrappers on a clean surface.
  4. Assemble the Rolls:
    • Dip one rice paper wrapper into the warm water for about 10-15 seconds until it becomes pliable but not too soft.
    • Lay the softened wrapper on a clean, flat surface.
    • In the center of the wrapper, place a small amount of lettuce or mixed greens, followed by a small portion of noodles, carrots, cucumber, bell pepper, chicken, and fresh herbs.
    • Fold the bottom edge of the wrapper over the filling, then fold in the sides, and roll it up tightly, like a burrito. Repeat with the remaining wrappers and filling ingredients.
  5. Prepare the Dipping Sauce:
    • In a small bowl, whisk together hoisin sauce, peanut butter, soy sauce, lime juice, and water until smooth. Adjust the consistency with more water if needed.
    • Garnish with chopped peanuts and red pepper flakes, if desired.
  6. Serve:
    • Serve the rice paper rolls immediately with the dipping sauce on the side.

Tips:

  • Work Quickly: Rice paper can become sticky if left out too long, so work quickly once they are softened.
  • Fresh Herbs: Fresh herbs like mint, cilantro, and basil add a burst of flavor. Don’t skip them if you can help it.
  • Variations: You can customize the filling with other ingredients like avocado, mango, shrimp, or tofu.
