Ingredients:
- 2 chicken breast fillets
- 1 can of chickpeas, rinsed and drained
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1 red onion, finely chopped
- Fresh parsley or coriander, chopped
- Juice from 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Season the chicken breast fillets with salt and pepper to taste.
- Fry the chicken breast fillets on a hot pan with a little olive oil until golden brown and cooked through. Let them rest for a few minutes, then slice them.
- In a large bowl, mix together chickpeas, red bell pepper, cucumber, red onion, and chopped parsley or coriander.
- Mix lemon juice and olive oil together in a small bowl to make the dressing.
- Pour the dressing over the chickpea salad and mix well.
- Add slices of cooked chicken on top of the salad.
- Adjust seasoning with additional salt and pepper if needed.
- Serve immediately as a delicious and healthy main dish or as a side to other dishes.
