Chickpea Salad with Chicken

Ingredients:

  • 2 chicken breast fillets
  • 1 can of chickpeas, rinsed and drained
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1 red onion, finely chopped
  • Fresh parsley or coriander, chopped
  • Juice from 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

 

Instructions:

  1. Season the chicken breast fillets with salt and pepper to taste.
  2. Fry the chicken breast fillets on a hot pan with a little olive oil until golden brown and cooked through. Let them rest for a few minutes, then slice them.
  3. In a large bowl, mix together chickpeas, red bell pepper, cucumber, red onion, and chopped parsley or coriander.
  4. Mix lemon juice and olive oil together in a small bowl to make the dressing.
  5. Pour the dressing over the chickpea salad and mix well.
  6. Add slices of cooked chicken on top of the salad.
  7. Adjust seasoning with additional salt and pepper if needed.
  8. Serve immediately as a delicious and healthy main dish or as a side to other dishes.
