Crust:
- 500 g sweet potatoes
- 150 g oats (or flour, if you prefer)
- 1 egg
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon dried oregano
Topping:
- 200 ml tomato sauce
- 150 g mozzarella cheese, grated
- 100 g fresh spinach
- 1 red onion, thinly sliced
- 1 red bell pepper, sliced into strips
- 100 g feta cheese, crumbled
- Fresh basil leaves for garnish
- Olive oil for brushing
Instructions:
- Prepare the Crust:
- Preheat the oven to 200°C (392°F).
- Peel and grate the sweet potatoes.
- In a large bowl, mix the grated sweet potatoes with oats, egg, salt, pepper, and dried oregano. Mix well until it forms a cohesive dough.
- Spread the dough on a baking sheet lined with parchment paper, forming it into a round pizza crust about 0.5 cm thick.
- Bake the pizza crust in the oven for about 20-25 minutes, or until it is golden and firm.
- Prepare the Topping:
- When the pizza crust is done baking, take it out of the oven and let it cool slightly.
- Spread tomato sauce over the crust.
- Sprinkle mozzarella cheese evenly over the tomato sauce.
- Distribute spinach, red onion, and red bell pepper evenly over the cheese.
- Sprinkle with crumbled feta cheese.
You can any toppings you like.
- Bake the Pizza:
- Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and slightly golden.
- Remove the pizza from the oven and let it cool slightly.
- Garnish and Serve:
- Garnish the pizza with fresh basil leaves.
- Drizzle a little olive oil over the top for extra flavor.
- Cut the pizza into slices and serve.
